This started off with such an innocent thought: I haven\u2019t had cornbread in a while\u2026<\/em><\/p>\n From there my mind wandered to the mound of fresh corn in my fridge.<\/p>\n Well I should definitely add some of that.<\/em><\/p>\n But I can\u2019t JUST add corn. What else\u2026<\/em><\/p>\n <\/p>\n Crispy bacon? Sure.<\/em><\/p>\n Use the rendered bacon fat in place of butter? YES.<\/em><\/p>\n Ok. Slow down. This might be getting a little too intense. <\/em><\/p>\n <\/em> Perhaps I need to lighten it up a bit.\u00c2\u00a0<\/em>\u00c2\u00a0Ah! Basil!<\/em><\/p>\n <\/em> <\/span> No joke. That was my thought process.<\/p>\n At any given time, there\u2019s a good chance I\u2019m hashing out some sort of internal food debate. It\u2019s just how I work.<\/p>\n <\/p>\n And any time bacon is involved, well, you just win.<\/p>\n <\/p>\n Basil and corn? Probably one of the best summer food combos in\u00c2\u00a0existence.<\/p>\n <\/p>\n Put it all together in a cornbread muffin and it almost feels like a meal in cup form!<\/p>\n Sweet corn, salty bacon, peppery basil \u2013 it has it all.<\/p>\n <\/p>\n And muffins are just cute, so why not?<\/p>\n <\/p>\nBacon Basil Cornbread Muffins<\/span><\/h2>\n
