- 3/4 cup half & half
- 11/2 tsp lavender (dried, loosely packed)
- 2/3 cup maple syrup
- 1/2 tsp vanilla extract
- 2 cups Greek yogurt (2%)
- 11/2 tbsp bourbon
In a small pot, bring the half & half just to a simmer.
Remove from the heat, stir in the dried lavender, and steep for 5 minutes.
Strain out the lavender, whisk in the maple syrup, and allow the mixture to cool to room temperature.
Whisk together the cooled maple syrup mixture with the yogurt, vanilla, and bourbon.
Chill the mixture until very cold, at least a couple of hours.
Churn according to your ice cream maker's directions.
- You can go for full-fat yogurt instead of the 2% yogurt recommended in this recipe.
- Avoid using non-fat yogurt, as it may become difficult to scoop it after freezing.
- For a different flavor or if you are on a vegan diet, you can opt for coconut yogurt.
- You may additionally use vodka, pineapple, or lemon juice to enhance its taste.
- In place of half and half, you could use heavy cream, or if you want to keep it a little lighter, just mix equal parts heavy cream and whole milk.
