Gooey Chocolate Chip Skillet Pizookie

Warm, gooey, and loaded with melty chocolate chips, this pizookie is an epic, shareable dessert. It has crisp, golden edges, a soft, molten center, and is topped with vanilla ice cream for ultimate comfort.

Ingredients

  • 1 cup (227 g) unsalted butter melted and slightly cooled
  • 1 cup (200 g) packed brown sugar
  • 1/2 cup (100 g) granulated sugar
  • 2 large eggs
  • 1 large egg yolk
  • 2 tsp (10 ml) vanilla extract
  • 2 1/4 cups (280 g) all-purpose flour spooned & leveled
  • 2 tbsp (16 g) cornstarch
  • 1 tsp (5 g) baking soda
  • 1/2 tsp (3 g) salt
  • 1 1/2 cups (260 g) semi-sweet chocolate chips or chunks divided; 1 1/4 cups in dough + 1/4 cup for topping
  • vanilla ice cream for serving

Instructions
 

  1. Preheat oven to 350°F (175°C). Grease a 12-inch cast iron skillet with butter or nonstick spray.
  2. In a large bowl, whisk together melted (and slightly cooled) butter, brown sugar, and granulated sugar until smooth and combined.
  3. Whisk in eggs one at a time, then add the extra yolk and vanilla extract and mix until glossy.
  4. Gently stir in flour, cornstarch, baking soda, and salt. Do not overmix. When the batter is about halfway combined, fold in 1 1/4 cups of chocolate chips.
  5. Spread (or press) the dough evenly into the prepared skillet with a spatula or your fingers.
  6. Bake for 20–25 minutes, until edges are golden and set, but the center is still a little gooey.
  7. Immediately scatter the remaining chocolate chips (about 1/4 cup) over the top. Let cool for 5–10 minutes before topping with ice cream and serving warm, straight from the skillet.

Notes

Feel free to swap in different chocolate chips, add nuts, or use mini pans for individual portions. Store leftovers tightly wrapped for up to 1 day at room temperature, 4 days in the fridge, or 2 months in the freezer. To reheat, microwave slices for 15–30 seconds or warm the whole pizookie in a 300°F oven.
