Kiwi Grapefruit Sorbet

This sorbet is extra refreshing with just a touch of sweetness and plenty of bold grapefruit flavor. The kiwi adds a pop of color and texture to every scoop.

Ingredients

  • 1/2 cup (120 ml) water
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (85 g) honey
  • 2 cups (480 ml) freshly squeezed grapefruit juice from about 3 grapefruits
  • 3 kiwis peeled and chopped
  • 1 tbsp (6 g) grapefruit zest
  • 2 tbsp (30 ml) vodka

Equipment

  • Small pot
  • Blender
  • Ice cream maker
  • Large Bowl

Instructions
 

  1. Warm the water, sugar and honey in a small pot over medium heat until the sugar is completely dissolved. Pour into a large bowl and put in the fridge to cool down while you prepare the rest of the ingredients.
  2. In a blender, puree the kiwis with the grapefruit juice and zest. Add the fruit mixture and vodka to the sugar mixture, stir to combine. Put this back in the fridge for a couple of hours to cool completely.
  3. Freeze according to your ice cream maker's instructions. Either serve straight out of the machine (it will be a little soft), or freeze until ready to serve.

Notes

You can substitute lemon juice for the grapefruit for a different twist. For a softer texture, enjoy freshly churned instead of fully frozen.
