Ingredients

  • 4 pounds Yukon Gold potatoes approximately 8 medium-sized potatoes
  • 8 garlic cloves or 1 to 1.5 teaspoons garlic powder
  • 1 tablespoon salt
  • 3 tablespoons unsalted butter
  • 2 tablespoons extra-virgin olive oil
  • 2 cups milk
  • 1 cup heavy whipped cream
  • 1/4 teaspoon freshly ground white pepper

Instructions
 

  1. Step 1: Peel and roughly chop the Yukon Gold potatoes. Rinse the pieces thoroughly under cold water. Place the potatoes in a medium saucepan and cover with water.
  2. Step 2: Bring the water to a boil over high heat. Add the garlic cloves (or garlic powder) and salt. Reduce the heat to a simmer.
  3. Step 3: Cover the saucepan with a lid and cook the potatoes for 15 to 20 minutes, or until the potatoes and garlic are tender and can be easily pierced with a fork.
  4. Step 4: Drain the potatoes thoroughly. Return them to the saucepan over high heat for 2 minutes to allow any remaining moisture to evaporate.
  5. Step 5: Transfer the potatoes to a large mixing bowl. Using a wooden potato masher, mash the potatoes until smooth and no lumps remain.
  6. Step 6: In the same saucepan over medium heat, melt the butter. Add the olive oil, milk, and heavy whipped cream. Stir until the mixture is warmed through and well combined.
  7. Step 7: Gradually add the mashed potatoes to the saucepan, stirring gently to incorporate. Simmer for 5 minutes, stirring occasionally, until smooth.
  8. Step 8: Add additional garlic if desired. Season with salt and freshly ground white pepper to taste.
  9. Step 9: Transfer the mashed potatoes to a serving dish and serve warm.

Notes

For a lighter version, reduce the amount of milk and cream or substitute with a lower-fat alternative. These mashed potatoes are excellent served with Cajun or onion gravy, and they pair well with a variety of proteins or vegetable mains.
