A bright, refreshing lemonade cocktail with gin, fresh mint, cucumber, and a homemade lemon-mint syrup. Perfect for summer parties and easy to batch ahead of time.
In a large pitcher, muddle the mint leaves, cucumber slices, and lemon mint syrup. Add the lemon juice and gin, stir well. At this point, you can put the pitcher in the fridge to keep until ready to serve.
Just before serving, add the sparkling water to the pitcher and stir. Fill 8 glasses with ice, divide lemonade among glasses and garnish with mint.
Lemon Mint Syrup: Combine water, sugar, honey, and lemon zest in a medium pot. Cook over medium heat, stirring occasionally, until simmering. Simmer for 2 minutes, remove from heat, then add mint sprigs and let steep as it cools to room temperature.
Strain the syrup and refrigerate in a sealed container until ready to use.
Notes
The syrup can be made ahead and keeps in the fridge for up to a week. Adjust gin and syrup for your desired sweetness and booziness.
