Stirring up a boozy mint lemonade
Making this refreshing drink is easy as a summer breeze. Simply simmer water, sugar, honey, lemon zest, gin, and some mint in a pot. Let this simple syrup cool.
Muddle some mint leaves and cucumber slices together with that fantastic syrup. Add freshly squeezed juice of a lemon along with two cups of gin and give it a good stir!
When you’re ready to indulge in this refreshing taste of summery heaven, bring out the pitcher and add two cups of sparkling water. Pile on some ice. Add some of that muddled lime juice elixir into the pitchers.
Toss in extra mint sprigs for garnish, and complete it with lemon slices thrown in for some extra zing. This one’s bound to be your favorite drink for the entire summer.
BOOZY MINT LEMONADE

- Medium-sized pot
- Strainer
Ingredients
For Boozy Mint Lemonade
- 8 nos. sprigs of mint (leaves torn off)
- 1/2 nos. cucumber (thinly sliced)
- 2 cups lemon mint syrup recipe follows
- 2 1/2 cups lemon juice freshly squeezed
- 2 cups gin
- 2 cups sparkling water
- Ice for serving
- extra mint for garnish
For Lemon Mint Syrup
- 2 cups water
- 1 cup sugar
- 1/2 cup honey
- 4 strips lemon zest pith removed
- 4 sprigs mint
Instructions
For Boozy Mint Lemonade
- In a large pitcher, muddle the mint leaves, cucumber slices, and syrup.
- Add the lemon juice and gin, and stir well.
- Put the pitcher in the fridge to keep until ready to serve.
- Just before serving, add the sparkling water to the pitcher and stir.
- Fill 8 glasses with ice, divide lemonade among glasses, and garnish with mint.
For Lemon Mint Syrup
- Combine all ingredients except the mint in a medium pot.
- Cook over medium heat, stirring occasionally, until simmering.
- Continue to simmer for 2 minutes and remove from heat.
- Add the mint leaves to steep in the pot as it cools to room temperature.
- Strain the syrup and refrigerate in a sealed container until ready to use.
Notes
- This recipe is for a pitcher of 8 drinks, but as long as you keep the same proportions, you can make any size batch.
- To make individual drinks, muddle a few mint leaves & cucumber slices with the syrup in each glass, then add ice and the remaining liquid.
- Try variations of this drink with different fruits or herbs, such as berries, orange slices, basil, etc, and create your own uniquely delicious recipes to beat the heat.
- If you prefer a non-alcoholic drink, omit the gin and increase the sparkling water.
